Usually when they're in their late teens/early 20's. If they don't get apprenticed, that's fine, and it's assumed they'll just find their own way in the world. As long as they're not just lying around doing nothing and refusing to help out around town, no one's going to have a problem with taking a little longer to find out what one wants to do in life.
